Low Carb Vegetarian Spaghetti Squash With SpaghettiWhen we're looking for a hearty but guilt free meal, one of our favorite quick and easy recipes is low carb vegetarian spaghetti with spaghetti squash. By eliminating whole wheat pasta and ground turkey from our delicious turkey spaghetti recipe, we're creating an incredibly easy low carb and vegetarian spaghetti dish that is delicious, filling and entirely guilt free!

LOW CARB VEGETARIAN SPAGHETTI RECIPE INGREDIENTS

  • Low Carb Vegetarian Spaghetti Squash With Spaghetti1 whole spaghetti squash, halved and de-seeded
  • 1 medium sized Yellow Onion, diced
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 8 oz. package of Baby Bella Mushrooms
  • 1 24 oz. Jar of your favorite Tomato Basil pasta sauce
  • 1 6 oz. can of Tomato Paste
  • 1 14 oz. can of Diced Tomatoes (or 2 fresh diced tomatoes)
  • ½ tablespoon Italian Seasoning
  • 1 tablespoon minced garlic
  • 1 cup dry Red Wine

SPAGHETTI WITH SPAGHETTI SQUASH COOKING DIRECTIONS

  • On a chopping board, cut the fresh whole spaghetti squash in half at the tall ends of the squash.
  • With a spoon, remove the seeds/inner parts of the middle of the spaghetti squash
  • Put the two halves of the squash with the inside facing down in a large glass baking dish
  • Cover the bottom 1/4th of the spaghetti squash with water and place in the dish in the oven uncovered on 375 degrees for 45 minutes

VEGETARIAN SPAGHETTI SAUCE COOKING DIRECTIONS

  • Low Carb Vegetarian Spaghetti Squash With SpaghettiWhile the spaghetti squash is baking in the oven,  pour the Tomato basil pasta sauce into a non-stick sautéing pan
  • Add the dry Red Wine, Tomato Paste, Minced Garlic and Italian seasoning to the sauce, stirring until the sauce has an even thickness
  • Add diced peppers, onion, mushrooms, and diced tomatoes
  • Let the sauce simmer covered on low heat, stirring occasionally until the spaghetti squash is finished baking

After 45 minutes of baking, remove the spaghetti squash out of the oven to check if it is finished cooking. To test whether the spaghetti squash is finished cooking properly, take a fork to the inner edge of the spaghetti squash and roughly abrase the squash. If cooked properly it will peel off the sides into a stringy, spaghetti-like consistency.

Clean all of the insides of both halves of the spaghetti squash into a serving bowl. Top the spaghetti squash with the spaghetti squash and serve!

TURKEY SPAGHETTI RECIPES INGREDIENTS

  • 2 tablespoons Minced Garlic (or 2 cloves fresh Garlic)
  • 1 medium sized Yellow Onion, diced
  • 1 lb Lean Ground Turkey
  • 1 24 oz. Jar of your Favorite Tomato Basil Pasta Sauce
  • 1 6 oz. can of Tomato Paste
  • 1 14 oz. can of Diced Tomatoes (or 2 fresh diced tomatoes)
  • ½ tablespoon Italian Seasoning
  • 1 cup dry Red Wine
  • 1 8 oz. package of Baby Bella Mushrooms
  • 1 Bay Leaf
  • 1 12 oz. box Whole Wheat Pasta

SPAGHETTI WITH GROUND TURKEY COOKING DIRECTIONS

  • In a non-stick sautéing pan lined with cooking spray, add Ground Turkey, Onion, Italian Seasoning and Minced Garlic, cook until ground Turkey is thoroughly cooked through.

Ground Turkey and Minced Garlic

  • Once the Turkey is cooked, drain any excess grease from the pan.

  • Add Tomato Basil Pasta Sauce, and stir in Tomato paste until it has a smooth, thick consistency.
  • Add Diced Tomatoes, Red Wine, Bay Leaf, and Baby Bella Mushrooms into pan. Let simmer for 20 minutes and stir occasionally.

 

Turkey Spaghetti Recipe

  • In a separate stockpot, boil Whole Wheat Pasta in water for 10 minutes or until slightly firm, then strain.

  • 3 Cups of Fresh, Chopped and De-veined Kale
  • 4 Cups of Water

HEALTHY LENTIL SOUP RECIPE COOKING DIRECTIONS

  • In a large pot, bring 12 cups of water to a boil
  • Once the pot has come to a boil, add 4 cups of Green French Lentils and let boil for 20-25 minutes or until lentils become tender

  • While the Green French Lentils are cooking, chop the Yellow Onion and Carrots

  • Strain the lentils once they're finished boiling

  • Once Potatoes are done boiling, strain the potatoes from the water and put them back into the medium-sized pan
  • Add finely chopped Green Onions, Minced Garlic (to taste) and Butter (to taste).
  • Mash all ingredients together and add more Garlic or Butter as needed to the preference of your taste buds to create the ultimate homemade mashed potatoes

    • Bread Crumbs & Egg

  • Meatloaf Glaze RecipeIn a separate small bowl, combine the Meatloaf Glaze Recipe ingredients:

Vegetable Beef Stew Ingredients

  • 2 Pounds of Stew Meat (Rump Roast or Chuck Roast)
  • 2 packages of Mixed Frozen Stew Vegetables
  • 4 Idaho Potatoes
  • 1 32oz box of Beef Broth
  • 2 8oz cans of Diced Tomatoes
  • One Large Yellow Onion
  • Minced Garlic
  • Worcestershire Sauce
  • Salt & Pepper

Vegetable Beef Stew Cooking Directions

  • Cut the 2 pounds of Stew meat into small chunks suitable for Vegetable Beef Stew or Soup
  • Dice the Onion and Potatoes
  • Combine Stew Meat, Onions, Garlic, Worcestershire Sauce, Salt & Pepper, and Brown the Stew Meat in a medium sized pan... Once the Meat is done Browning, drain out all but about a cup of the leftover juices
  • After straining, dump the Beef, onion and Garlic into a large pot or into a crock pot
  • Add the 2 Packages of Mixed Stew Vegetables, 2 Cans of Diced Tomatoes, Diced Potatoes and Beef Broth to the large pot or crock pot and stir the ingredients
  • Add a little more Worcestershire Sauce, Salt & Pepper (careful with the pepper, it can get a little spicy if you add too much.)
  • Let the large stove top pot or crock pot cook on low heat for 2-3 hours, stirring occasionally

Difference Between Soup & Stew Consistency

  • Vegetable Beef Soup RecipeIf you're looking for more of a Soup consistency, your work it mostly done. If you're looking for more of a thicker, Stew consistency you'll have just a little more work to do.
  • For a thicker Stew consistency, you'll need:
    • Medium Sized Bowl
    • 1/4 to 1/2 cup of Corn Starch
    • 1/4 to 2/3 cup of Water
  • Combine Corn Starch and water into the Medium Sized Bowl and Whisk until it becomes a thick liquid. Pour liquid into pot and stir thoroughly. Repeat this step if the stew isn't thick enough for you.

After the pot has simmered for 2-3 hours, enjoy! Serving with fresh cornbread is also an excellent idea!
